		<description>Here's my favorite cookie recipe for a Chewy Molasses Spice Cookie courtesy of the Cooks Illustrated folks.  I'll have to try your version and maybe merge the two!

Preheat oven to 375 F.

Whisk together:
2 1/4 c flour
1/3 c white sugar
1 1/2 tsp each of Cinnamon and Ginger
1/2 tsp each of ground Cloves and salt
1/4 tsp each of Allspice and finely ground Black pepper

Cream together:
1/3 c brown sugar and 12 oz room temp butter
Add and mix 20 seconds, then scrape the bowl:
1 large egg yolk and 1 tsp vamilla
Add and mix 20 seconds, then scrape the bowl:
1/2 cup molasses
Add the flour mix and just incorporate.

Use a Tablespoon measure to portion.  Roll into little balls and coat with sugar.  Place on a parchment or foil lined tray.  Bake for exactly 10 minutes (no more or less).  Cool 5 minutes then transfer to a rack. Makes about 40 cookies.</description>
